The following are “Fool Proof Recipes” I have collected since I have been married! They passed the test of one picky eater and one not-so-gourmet cook! Hope you enjoy!

Iced Coffee:

3 cups of strong coffee, 2 cups of sugar, 1 pint of creamer or half and half, 4 cups of milk, 2 tsp of vanilla

Dissolve sugar in hot coffee. Cool. Add other ingredients. Pour into empty milk container (or even strong ziplock bag), place in freezer (allow room for expansion).

Remove from freezer 1 or so before serving. Mix and serve very icy! Makes 18-20 punch cups. This is always a hit and really yummy!

Buffalo Chicken Dip: my mother in law gave me this one. Our small group loves it!

1/2 bottle Texas Pete sauce, 1 cup of Ranch, 2 blocks of cream cheese, 1 cup of shredded cheese.

Boil chicken and shred. Combine all ingredient into a baking dish. Bake 350 degrees for 30 mins. Remove and serve with Tortilla chips! So yummy!!!

My Chicken Casarole:

chicken, 1 can of cream of chicken soup, 1/2 cup of mayonnaise, 1/2 cup of milk, couple of handfuls frozen broccoli, 2 cups of shredded cheese, Ritz crackers, 1/2 cup of butter.

Cook chicken. Cut into small piece then shred smaller in a food processor. Combine all ingredients (except Ritz and butter). Smash 2 bags of Rit crackers put into a plastic bag, pour melted butter into bag and then mesh together. Remove from bag and line the bottom of a greased casserole dish. Pour chicken mixture on top. Spread evenly, then cook for 30 mins at 350 degrees. This one is one of Mark’s favorites!

Zippy Slow Cooked Chili: from Taste of Home

1lb. of grd. beef, Can of diced tomatoes, medium onion, green pepper, vegetarian chili, tomato sauce, 2 tbsp of chili powder, 2 teasp of parsley, 1 tbsp of dried basil, 2 teasp of ground cumin, 4 garlic cloves minced, 1 teasp. dried oregano, 1/8 teaspoon of hot pepper sauce, shredded cheese and chives.

Cook meat. Drain. Transfer to a slow cooker. Add all ingredients (except cheese). Cover and cook on low for 6-8 hours. When serving sprinkle with cheese and or chives. This is a wonderful and flavorful chili that can be cooking all day and ready when you get home!

Italian Side-by-Side Calzone:Wonderful, easy recipe from Pampered Chef.

1/2 cup of copped onion, 1 lb. of hot turkey sausage (4 links), 1/2 cup diced green bell pepper, 1/2 cup of olives (I omit these), 1 can of pizza sauce, 1 garlic clove pressed, 2 packages refrigerated pizza crust, 1 cup of mozzarella cheese, 1 tbsp of Pantry Basil Oil or (Extra Virgin Olive Oil), 1/4 cup Parmesan cheese.

Chop onion. Remove and discard casing from sausage Cook saus. and onion, breaking into crumbles. Dice bell pepper and combine sausage mixture, bell pepper, diced olives, pizza sauce and garlic. Mix well. Lightly flour a cook stone or pizza pan. Unroll one pizza crust. Stretch dough into rectangle shape. Sprinkle moz. cheese over dough. Leave a 2 inch separation between rows down the center and a 1-inch border on the sides. Fill mixture over both rows of cheese. Unroll other pizza crust. Carefully place it over the first crust, matching the edges. Press a seal around the edges and through the center (where the 2 inch sepaation is). Using a pizza cutter, slice stripes on the top. Lightly spray dough with Olive oil and sprinkle cheese on top. Bake for 22-25 mins. at 400 degrees. Cool for 10 minutes and then serve! We love this one! It really is supper easy and delicious!

Mexican Casserole: this recipe was given to me at wedding shower by Ruth Barnes a friend of my grandmother.

6-8 tortillas, 1lb. of hamburger meat, 1 can of cream of mushroom soup, 1/2 can of JalapeƱos, 1teaspoon of cumin, grated Am. cheese, chopped onion, garlic salt and pepper.

Brown hamburger meat, add soup and seasonings. In a casserole dish, layer ingredients, begining with tortillas, add meat mixture, and then cheese. Cook 20 mins. at 350 degrees. This one is different, easy and very yummy!
